After having spent more than 20 years working in Paris with top chefs (from George V with Philippe Legendre to the Lancaster with Michel Troisgros) and having been awarded two stars at the Lancaster in 2015 and the Meilleur Ouvrier de France in 2019.
I wanted to join a large, top-notch French company in order to share my expertise, experience and simplicity. La Réserve de Beaulieu was an obvious choice: the setting, the history, the architecture, the design, the notoriety and the Delions.
My goal is to bring out emotions through my cooking. To do this, I use various seasonings along with homemade vinegars, citrus fruits and grilling as well as the influence of our suppliers from the region.
I place great importance upon nature and I like supporting the work of the fishermen, breeders and farmers who offer us exceptional products. We use their products with the highest regard for pleasing our guests.
Each day, we strive to provide all of our guests with a unique experience, and Guillaume, the restaurant’s Director, and team are charged with this.

After studying room service and marketing in Paris at the TECOMAH-FERRANDI campus, Marc Piquet joined the prestigious Ritz hotel as an apprentice. At this legendary establishment, the young student decided to complement his skills with a sommelier degree. He was to develop a passion for the world of wine that would stay with him always…
In 2007, Marc Piquet flew to England to work alongside Michelin-starred chef Philip Howard and continue his passion for sommellerie. He joined the Michelin-starred gourmet restaurant The Greenhouse in 2011 as head sommelier and while he was there, the restaurant was awarded a second star in the Red Guide in 2014. The following year, he became general manager of the restaurant.
After a dinner coordinated by four professionals, it was almost by chance that the young Marc Piquet met Arnaud Faye, the MOF and two Michelin-starred chef of La Chèvre d’Or. After a collaborative and professional bond grew between the two men, Marc decided to pack his bags and move to the south of France to work.
In 2022, Marc Piquet joined the teams of La Réserve de Beaulieu as Director of restaurants to his great delight:
« And my role? To be the premier ambassador for the kitchens and sommeliers and to coordinate all the services so that each of our clients can enter a snug little bubble during their stay or even just during their dinner. »
